Sort order of the products is depend on the setting you have done at your backend Preferences>>products “Default order by” ,

you can change the order in module query also as you like like .

these are the sort ordering available in prestashop ‘name’, ‘price’, ‘date_add’, ‘date_upd’, ‘position’, ‘manufacturer_name’, ‘quantity’, ‘reference’

From module backend select the categories you want to show in homepage tab and also enter number of products to show per category
